METHOD
1. Preheat Oven Gas 7/Electric 220°C

2. Roll our pastry on a floured surface into a long strip 3 inches wide.
3. Roll the sausage meat with floured hands into a "sausage" making it as long as the pastry
strip, place on the edge of pastry.
4.Roll up pastry to to enclose the sausage,
wet one edge before the final seal.
5. Cut roll into equal sized lengths (approx 5cm),
place seam downwards on a baking tray
6. Brush over with beaten egg or milk amd make 3 cuts across the tops.
7. Bake for approximately 20 minutes until golden brown.
Serve hot or cold.
APPLE TART
Filling
3 large green apples
peeled cored, and sliced
4oz sugar
3oz raisins
1 teaspoon ground cinnamon
4 cloves
4 teaspoon lemon juice
BASE & CRUST
4oz margarine
4 oz castor sugar
1 egg
9oz plain flour
2 teaspoons baking powder
½ teaspoon salt
1 FOR FILLING..
Mix apple slices with other filling
ingredients in a saucepan.
2 Simmer for about 5 minutes
Drain off excess juice and leave to cool.
Remove cloves
3 FOR Base and crust..
Beat margarine and sugar together.
Add egg and beat until light and fluffy.
4 Sift dry ingredients and add to egg mixture,
forming a soft dough.
5.Roll half of dough and press into a greased
9 inch pie dish. Spoon apple filling onto pastry.
6 Coarsely grate remaining dough onto filling
7 Bake in a preheated oven
160°C/325°F/Gas 3 for 1 hour.
8 Dust with icing sugar and serve hot or cold with cream
SCONES
9oz/280g plain flour
1 tablespoon baking powder
½tespoon salt
5 tablespoons castor sugar
2oz/65g margarine or butter
1 egg
125ml/4fl oz milk
METHOD
1 Sift dry ingredients together.
Add sugar.
2 Rub margarine into dry ingredients until
mixture resembles breadcrumbs.
Mix egg and milk together and add to
dry ingredients, forming a soft,
but not sticky dough.
3 Turn out onto a floured surface and
roll out lightly to a thickness of
2cm/¾inch.
Cut into rounds
Place on a greased baking tray
and bake in a preheated oven at
200°C/400°F/Gas 6
for 12-15 minutes.
Beautiful served with jam and cream
